I made this super delicious vegan Pad Thai for dinner last week. I used this recipe as a launch pad, but changed it up quite a bit. Just because of what I had on hand.

    1. Ha ha! Well, if you buy the ingredients once, many of them you only use a little bit of, and they last a long time! (like soy sauce, tamarind paste, etc!) And I pretty much always have tofu and rice noodles on hand. 🙂
